I think the Sweethearts theme is great because you can decorate inexpensively with photos of great couples throughout time. You can really have fun with that--Lucy & Desi, Mickey & Minnie, Antony & Cleopatra, Marge & Homer (Simpson :), Marilyn Monroe & Joe DiMaggio, etc. And you could totally get decorations and stuff on Valentine's Day clearance. You can get tons of those cardboard hearts and write love sayings on them or something...or something about the two of you like, "(your name) and (his name) first meeting (the date you met)", "(your name) and (his name) first kiss on (the date)", all the way to "(your name) and (his name) married on (the wedding date)". :)
People would totally remember that sort of thing! :)
I picked the bohemian idea because it really appeals to me. The first thing that came to mind when you said that was CHOCOLATE FONDUE and a CHOCOLATE FOUNTAIN... a treat popular amongst beats and later, hippies.
I'm having a renaissance themed wedding and my mom did offer me one note of caution--make sure the senior citizen guests know what is going on with a theme. I'm doing this by having my grandmother talk to most of our senior guests so that they know what to expect and that they don't have to wear a costume.
I wouldn't necessarily know how to go about the Bohemian theme, I don't know enough about Bohemianism aside from Moulin Rouge.
Sweethearts just sounds cheesy though. It gives me a connotation of more superficial cutesy love than deep, longlasting love like you want your marriage to be. The Bohemian theme reaches that deeper level.
