Ianto was using dark humour in the chair scene to keep reminding/guilt-tripping Jack that this was a really, really bad idea and something they shouldn't be doing, not because he was making fun of the situation.

Wait, there was another interpretation? It never occurred to me that Ianto was anything but against them using the mind probe and thought it was a bad/wrong idea. "Last time it made someone's head explode" seemed to be a caution not a joke; seriously there were people that took it differently?
