Female cows lactate even if they don't HAVE calves. So you get the milk from them. Calves don't get milk stolen from them. If a cow is nursing, she's not milked.

Well...stealin' is kinda a strong word fer it. But yeah, y'have to take it from cows. Though not baby ones-- the young'uns don't give milk till they're older.
