Belated New Year's Toast

Rather than opening a bottle of bubbly to toast the New Year, I decided to save the bottle to enjoy on another day.

Tonight's supper, a quick Cheese Souffle made with Gruyere, seemed the perfect time to serve it.

Thank you. We were still stuffed from a late sushi lunch so it was enough for me. :)

It sounds like you're having a great time in Sweden with your family and friends though complete darkness at 3pm is kind of scary. I just saw the American remake of "The Girl With the Dragon Tattoo" on Sunday (I'd seen the original as well) and wondered what your opinion was of the 2 movies.

It's an 8 fluid oz (250 ml or 1 cup) ramekin.

You're welcome. I took the original recipe which was for 6 people (either as a communal souffle or as 6 individual ones) and scaled it down for 2 people. Otherwise, I'd never have made souffle at all.

My next souffle attempt is going to be individual chocolate ones.

Cheese souffle! Yum! I love Gruyere cheese and I even eat with crackers...and I can't stop once I start eating! I hope you had a wonderful holiday with your family!

I love most cheeses, except for blue cheeses and the ones with fruit in them, so the souffle is just another way to indulge myself. Recently I discovered soft goat cheese on white pizzas with fresh herbs, caramelized onions and prosciutto. Yummy stuff.
