No, you're not having a flashback to four months ago.

I just realized that I never posted the meal for this past Easter.

Which was a shame because I made a delicious Tuscan bread and vegetable soup called "ribollita" for starters ...

That soup looks AMAZING - I am adding it to my list to make as soon as the weather cools down!

Thank you. It's really good. Only drawback is that the bread keeps absorbing more liquid on sitting so the soup gets thicker. That's why you only want to add about half of the bread to the soup and reserve the rest for a garnish. :)

I made a half batch and froze away 2 individual servings, I added some more water to the soup when thawing/reheating and the thickness was ok.

Oh ... I used spinach but you can also use kale or escarole if you want.
