Pork Chile Verde and Cauli-Rice Bowl

It's cold and gray and I'm bored so I made one of the easiest lunches or dinners that I've had in ages using leftover chile verde (green) enchilada sauce and cubed pork tenderloin.

I'm trying to warm up to cauliflower rice, but I haven't managed yet... The other looks luscious, though.

I know it's bland and boring but if you added fresh julienned mint to it or grated lime zest, it would help add flavour. The 'tater tots' I made with it were very similar to potato ones. Give it a try if you haven't yet. It won't scar you for life. :)

I have several times and I can't warm up to it anymore that I can warm up to cauliflower mashed 'potatoes' or pizza crust. I'll find a different way to curb my starches.

That seems sensible. You can't like what you can't like. Like my issues with raw tomatoes. Salsa, I'll eat. But, slice a raw tomatoes and put it in a sandwich or in a salad and I gag.
