Sushi at Home - Purple Sushi Rice

Even if the only sushi fillings you have in your fridge are cream cheese (home made Boursin) and smoked salmon, you can turn your boring old Philadelphia roll into a dramatic visual by colouring your sushi rice and then using it to make an inside out roll.

It was a fun thing to try.

Orange (add grated carrot to the cooking water) and green (pureed peas or ground pandan leaf puree or the dry powder) rice are also seen.

For another pink natural colouring, I've seen fresh raspberries pureed/mashed, sieved and the liquid stirred into hot cooked rice. It's not sweet but somewhat tangy which is fine when added to sushi rice.

I did a lot of Youtubing/net surfing on sushi techniques when I first started making it and have seen several ways to colour sushi posted including stirring in crushed raspberry juice or adding grated carrots/juice to cooked sushi rice and microwaving it. This was something I could do with some of the red cabbage in my fridge ... so I jumped on it. :)
