German Themed Christmas Menu - Sauerbraten and Gravy, Rotkohl and Gingerbread Cookies

I had planned on a traditional Christmas meal featuring a roast turkey and its accompaniments, but, less than a week before the event, I changed my mind, and decided on a German themed menu. I love red cabbage and sauerbraten - I followed a recipe where I soaked the roast for 5 - 7 days before cooking. It’s a perfect winter meal, and I’m pleased it was a success for you!

I followed a recipe that said to marinate the beef for 3-5 days but it was a small piece (1 kg) and it was recommended to make the sauerbraten ahead of time so I only marinated it for 3 days, then sliced the meat the day before I served it. I braised it for 4 hrs (had to flip the beef since the marinade liquid only came a bit over half way up so the timing was iffy).

I sliced the roast warm and it fell apart so it may have been overcooked.
