Chicken and Dumplings ... with Rolled Noodles (Trial #2)

Rarely have I made a dish that was as satisfying in the preparation as it was in tasting the finished product.

Chicken and dumplings is a hearty comfort dish ... a glorious chicken stew with a creamy texture filled with tender shredded chicken and vegetables. The 'dumplings' may be either drop biscuits, which I've made before, or rolled noodles. ( Read more... )

That looks so tasty! It's been FOREVER since I made dumplings! I've been making my stew in the crockpot for years - and that doesn't work for dumplings - and I've been too lazy to dump the stew into a pot at the end and simmer it to make the dumplings.

I've actually never made chicken stew - I've only ever had beef stew. I really should rectify that!

I like beef stew but this is tasty too and easy to make. Not a lot of hands on time once you prep the veggies. If you have chicken stock and a rotisserie chicken it's a quick meal but I enjoyed making it all from scratch. I'm still deciding whether I like the drop biscuits or the rolled noodles better. You can cook these noodles separately in salted water and add them to the stew at the last minute if desired.

You might want to check out the drop type dumplings from the previous attempt. It's the more traditional version.
