One Pot - Creamy Ham, Pea and Egg Noodles

Cooking for one (or two) means you often have leftovers from things you've thawed. In this case, I had a cup or so of diced ham from a 2 cup bag I'd frozen for soup. (I used the other cup for a broccoli, cheddar cheese and ham quiche.)

I don't know why In ever think of these things when I'm wracking my brain at the end of the week during menu planning. This would have been so much better than hot dogs.

Both the noodles and the quiche were good. I have a container of the noodles left and I made a half pound of breaded, baked chicken tenders yesterday. The rest of the chicken breasts were turned into cutlets and frozen.

I have leftover steak, a few tbsp of the mushroom mixture and some sushi rice that I thawed ... it will end up as a sort of quick soup/congee or I may just stir the sliced steak and mushrooms into the warmed rice and add some soy sauce. Decisions, decisions.

PS: Right now I'm having coffee and a container of blueberry yogurt. I really NEED to go grocery shopping and pick up a 5 lb bag of potatoes ... rakott krumpli (potato, hardboiled egg and Polish sausage casserole) is on the schedule.

You are just so good at buying in bulk and then creating lovely things. I tend to buy just in time - mostly because we have squat for freezer space. Sigh...
