Pi Day - Foolproof Lemon Meringue Pie

I haven't made lemon meringue pie in ages but after my LJ friend Spikesgirl mentioned making one, recently, I got SUCH a craving that I couldn't resist making one too. Of course, that meant that I was going to have to eat an entire pie before it went bad ... or I got so sick of eating it that I had to pitch the leftovers.

mmmm lemon meringue pie is SO tasty! My friend makes it a couple times a year - the last time, she did a similar thing and ended up with extra filling, so she put filing in ramekins and skipped the crust - it was just as good :)

I agree that the filling was fine by itself though I messed up several things in my crust preparation that didn't help the situation.

Yum, your filling is much thicker than mine. I panicked and added some additional water. I won't do that again.

It's all in the recipe. The filling was tasty though it could have been a bit tarter ... maybe when it's cold.

We used Meyer lemons, so it was plenty sweet. I cut back on the sugar, but not really enough.

It's hard to judge sweetness ahead of time depending on how sweet the lemon juice is. I've sometimes used a combo of lemon and lime juice. Or even a bit of orange juice. I was tempted to add green food colouring for St. Paddy's Day but it was 8:30 pm and I said the heck with it. :)

I'm too chicken to do a meringue pie I can make a lemon soufflé, but that's about it, so I made a savory pie with one (frozen) crust and a sweet one with the other. The savory one was a variation of shepherd's pie, the sweet one was an ice cream pie (mixed chocolate gelato with hazelnut gelato, then filled the prebaked shell that was coated with a layer of Nutella before returning to the freezer.)

It's a shame that my flatmates can't eat either (forces me to interact with the neighbors...) Next year, perhaps I'll make these in mini pie plates and make special pies for my flatmates (either tuna or real meat, no additives like onions or garlic, topped with a sprinkling of cat treats...)

The instructions for the meringue pie are pretty straight forward. Just make sure your egg whites are at room temp so the sugar dissolves and you don't have a grainy meringue.

Your flatmates are the four footed furry kind, I'm guessing. :)

I like making savoury pies as much as the sweet ones.

1) I don't use sugar except if I'm baking yeast-raised bread (and I have single-serve packets that I grab from school to "feed" the yeast.) Otherwise, I use sucralose/Splendatm since I have diabetes

2) Yes, my flatmates meow and are addicted to catnip

3) Have you ever made a savoury pie using spinach? I have a recipe for spinach quiche as well as one for authentic spanokopita the second recipe was from a gentleman from Athens that I met via a name-nerd site I belong to. *blush*

I've made quiche with spinach but never a spinach pie per se. I've made several versions of the Greek spinach and cheese pie (spanakotiropita) using phyllo dough and even a version with spinach and home made Mexican chorizo sausage ( ... )
