There are a number of recipes for mititei or mici (aka cevapci) out there which are all good. Youtube videos show how to make them ... it's the taste and texture that I'm trying to replicate to make them similar to the mixture of meat and spices that I can buy locally. To be honest, good ground beef, lots of finely minced garlic, some summer savory, ground pepper and salt, a bit of baking soda and seltzer water and lots of mixing until you get a stiff paste is about all that's essential. Then there are the add-ins that each family prefers including minced/grated onion or onion powder, cumin, all-spice etc. ;)

I will add this to my recipe file, then. I need to experiment more. I've been doing a lot with Spanish tapas this week and this seemed to just fit right in.
