Victoria Day Weekend and Palak (Spinach) Paneer

Between taking time off for a bad cold which started with the sore throat from .... well, you can guess, and a Friday without any calls, I've been home for six days. And doing very little cooking that I can post about.

So, this palak paneer is a stretch to be creative with very little energy.

I devour paneer every time I go to the local Indian restaurant buffet but have never investigated what it takes to make it. It looks rather more manageable than I thought, and I may have to attempt it. Also NOMZ for the strawberry pancake things! My favorite cooking site, Smitten Kitchen, has a wonderful strawberry summer cake, and just a couple of days ago she posted a recipe for strawberry graham icebox cake which I may have to try as well.

Making the paneer itself is easy ... bring 8 cups of milk to the boil, stir in 1/4 cup of white vinegar. Stir and take off the heat and 15 minutes later, you have curd. Pour the curds into a cheesecloth or nutbag lined bowl, rinse, drain and press ... and you have 8 oz of fresh paneer. So much tastier than the stuff you buy.

And you can use your paneer in a bunch of things.
