Duck and Pork Cassoulet/Casserole

I first tasted this dish at a very expensive restaurant in Chicago while visiting there with some friends. Well, now, that's just yummy looking from every angle. I've never tried a cassoulet. Perhaps I should one of these days as there never seems to be any duck recipes in my favorite cookbooks. thanks for sharing this with us! :D

To be honest, I haven't really looked into my various cookbooks for duck recipes. I know I made a quick jambalaya with leftover duck meat once but that's as creative as I got. The classic Peking duck dish (not Pekin which is a type of duck) with pancakes is the only one I really know of.

It's tasty but 'chewy' unless you cook it so long it falls off the bone.

Duck can be chewy, which is probably why they suggest chicken instead.

Mmm... I love cassoulet! I haven't made it in several years bc it's not a food for Hawai'i, but I'm sure it will come back on the table now that we are in northern climes.

I'm bookmarking this, even though one of the few sadnesses of my life is that Shog won't eat beans. I will, though, and especially in a dish like this one!
