I have to confess to not being a fudge girl, but this looks brilliant and yes, even imperfect food is often just fine.

I remember buying fudge (Black forest with chocolate and a creamy pink layer with maraschino cherries in it, the mint was great) at the corn festival in my youth and there used to be a great little candy shop downtown that had fudge and pralines, caramel corn, chocolate coated pretzel rods ...

I haven't made fudge in years - prolly due to not having a candy thermometer anymore. I'll have to rectify that so I can try your recipe here!

You can try the 'soft ball' test but it's probably safer to get an instant read thermometer.
