It's funny in that I like cauliflower, but we rarely eat it. I might have to get some to try this out. Not so much with the hot sauce, though. That can be left out.

The original recipe had equal parts liquid (milk and water) to flour and the seasonings to taste ... since it was a vegetarian recipe. You could add an egg and reduce the liquid by ~1/4 cup instead. The hot sauce is what 'makes' the recipe in my opinion. :)

I will have to decide. We don't do a lot of hot stuff, so that is a viable concern for us. Too spicy and I might as well pitch it.

If you just batter and bake the cauliflower (turn several times to unstick the florettes and get them crispy) you can use whatever dip you want for them. Or just drizzle some hot sauce/melted butter over them before serving.

Remember though ... the recipe was designed as a REPLACEMENT for Buffalo hot wings so that's the focus for the recipe. Making changes takes away the whole point of the recipe.
