Pine Nut Brittle and a Break

I  think I'm going to take a bit of a break ... not sure how long though so I'll leave you with a quick candy recipe post. This will give anyone reading a chance to catch up on earlier posts which they may have missed (hint) and give ME a chance to come up with some ideas for what to make during my two months of summer break.

I adore pine nuts and never thought of brittle. I will have to make some for Christmas! It would be a fun alternative to peanuts.

How was the chicken kabob recipe a fail? It looks yummy enough.

I should make some salad this week, maybe Hawaiian potato salad (it has potatoes and macaroni in it).

Yummy looking as always.

The spice mix that I used was bland and boring. At least I didn't dry out the skewers which I cooked in the oven ... the meat was perfectly cooked through and still moist.

It's always a disappointment when you are expecting something flavorful and it's a dud. I had that happen when I made pelau. Now I just go out for it.

Some things are just too fiddly to get right at home without a lot of effort. And I'm all about getting the proper effort/result ratio. :)

A pine nut brittle - that is a great twist on the classic!

Why was the chicken disappointing? Was the flavour lacking?

Yes, the chicken wasn't very flavourful. I can't remember where I got the recipe for the chicken shawamra spice mix but it was a dud. In fact it needs some ACTUAL flavour.

A bit more salt too.

That pine nut brittle looks amazing.

I wish I could remember to take photos of stuff I cook. I made a pineapple upside down cake last night that came out of the pan beautifully and looked luscious, but we've already devoured half of it so it doesn't look so pretty any more lol
