I bought a lovely fillet of steelhead trout a while ago and waited to cook it until I was inspired.

Wow, I haven't had fiddlehead fern since I was a kid. We used to get really excited because they were some of the first things to come up (we had a long stone wall in front of our place and we would go out and pick them by the buckle full, along with dandelion greens. It would be the first fresh greens we'd had since the fall (my mom preserved everything, but fresh was, well, fresh).

Good memories. Strangely enough, our stores don't carry these yet.

I don't know where they got them from but it was the first time I'd seen them so I thought I'd give them a try. I bet freshly harvested ones would be even better. :)

I haven't had them in so long, I'm trying to remember what they even tasted like. I remember really enjoying them, though.

When I looked them up I found the info that they taste similar to asparagus. I think that's pretty accurate.

I love hollandaise sauce, and it's so much easier to make than people think it is. I've never tried the fiddlehead ferns but our local food co-op has them so I need to take the plunge...

I love hollandaise and don't make it NEARLY enough.

Washing the fiddleheads is the fiddliest part of the process since you have to uncoil them under running water to rinse out and then coil them back up without breaking them. They're fairly fragile and will snap but that doesn't affect the taste. They're just not as pretty. :)
