Corn and Red Pepper Seafood Chowder

I was home with nothing to do, this afternoon, so I threw together what turned out to be a very tasty seafood chowder with odds and ends from the freezer and my fridge. I had a couple of tablespoons' worth of sliced red pepper that I didn't use on the pizza that I made on the Sunday so I threw it in and referred to its presence in the soup. You may ( Read more... )

Sigh, this looks so good, but I will have to pass or make it without the clams. Still the corn and red peppers looks yummy!

Thank you. You could make it with whatever seafood you like ... including some real fish. I was bummed cause there weren't any shrimp left in the bag. I must have picked them all out to add to the last dish I made. Oh well, time to buy another bag cause I definitely want to make this soup again.

Between the soup and the smoothie, I'm pushing supper back for a couple of hours.

I love clam chowder. I've made it a few times and it's been good but never amazing. Maybe my expectations are too high. :)

I love a good seafood chowder. When our daughter went to school in Ireland for a semester, I went over for about 10-12 days. As we drove around the countryside, I found that seafood chowder and brown bread made for a tasty and inexpensive meal almost everywhere we went.

I had a second bowl today. It was even better than yesterday. The rest went into 2 containers of 2 servings each and then into the freezer for a day when I'm too tired to cook.
