I should never read your posts on an empty stomach. It's going to make my English muffin look pretty wimpy this morning. The crepes are my favorite, yum, yum, yum!

They were a last minute inspiration. I was just going to the plain crepes poached in the raspberry/peach puree but I had some ricotta in the fridge that I didn't eat after buying a bit.

How wonderful is the peach melba flavour. You have certainly got me thinking about ways to enjoy peach melba - I've been way too tame! I do love the look of your parfait xx http://hotlyspiced.com

Thank you. I agree the combination of peaches and raspberries is a winner. I have a hard time trying to make a trifle look good even though it's a great way to enjoy leftover cake.

Speaking of cake, I just got finished sampling a piece of the peach melba crumble bars ... the contrast between the sweet peaches and the tart raspberries rocked as well.

Thank you. And it's not over yet as I had some leftover ingredients which I didn't want to go to waste. This is what happens when you live alone and buy a bunch of perishable items.
