Raisin and Ricotta Cheese Blintzes

My mom worked in the kitchen of a Jewish deli for over 20 yrs. In that time, she learned to make a LOT of Jewish dishes. She even cooked some of them for us. :) But she never made these cheese blintzes, even though she obviously knew how to make amazing crepes. It's funny but fresh cheese is something which I would never classify as savoury or as sweet... Different kinds of fresh cheese are used in so many sweets... Fresh cheese pancakes remind me of my childhood, though my mum used to fold them in a different way and they were served without anything on top. Yours look lovely with the fruit sauce. I should try these. We just roll them up with the cheese mixture and sprinkle them with icing sugar.

At the deli they would make these ahead of time, freeze them and then just panfry one or two to order. I liked that I could actually make a batch, freeze them and then thaw them in the microwave and spoon some sauce over the top for an elegant but fast dessert.
