Picspam - Cannoli filled with ricotta cheese

Rather than adding a picture of the cannoli filled with the traditional ricotta cheese and mini chocolate chip mixture to the original post, I'm making a new post. Cause they deserve it. :)

I've never been a big cannoli fan but these might make me a convert.

The bakeries I've bought cannoli from in town either add the chocolate chips to the filling or dip the ends of the cannoli in the chips. They were very good. I ate 4 today. :)

Like you, cannoli's are not my favourite thing but with your endorsement Maria, I too may have to jump on the bandwagon and give them a try. I liked your original recipe, but I would likely add a touch of lemon rind; there is something about the sweet and tangy cheese with the lemon rind that drives me crazy. Have you ever seen a baked cannoli recipe? You know me and deep frying, it's just not my bag, but baking these babies may just be what I have been looking for!

You can certainly add lemon or orange zest to the ricotta cheese mixture if you want. Citron is another commonly used addition.

I HAVE seen a recipe where the cannoli are baked. In fact, Katerina, of Diethood, bakes a flat batter type at 375 deg F for 7-8 minutes, lets them cool a bit and then wraps them around a tube to cool and set like a brandy snap cookie. The link to her recipe is here.

Deep frying was not my bag either but it was worth it in this case.

PS: Visit this web site where cannoli made with the regular recipe are baked at 500 deg F on a wire rack for 10 min ... he took them out at 7 minutes.
