Unfortunately, after working around all those sick children I managed to catch a throat infection which finally laid me low and, even after 2 weeks, I still have a lingering dry, hacking cough and recurring headaches ( Read more... )

Thank you for the compliment. I'm not as good at plating and setting the table as the blogs I try to emulate but I try to make my food look tasty on what has become a food diary of meals I make and eat. :)

Do you make your own jerk marinade? If so, would you share the recipe?

Thank you for the compliment though I'm not contagious any longer so you'd be quite safe.

Sorry, no, I use a jarred marinade (usually Walkerswood) as I make jerk so rarely that it's just not worth going to the effort for a tablespoon of marinade. :)

Sorry to hear you haven't been well. I was wondering why you haven't been posting. I haven't had a good run myself with my stress fracture and my thyroid playing up. My health problems have been minimal compared to yours ... plus you have to take care of your children and husband as well. All I have to take care of is myself.

Thank you for your kind words. I hope to make the almond cookies you posted, or at least a version of them soon. At least now I know how to peel the whole almonds in my freezer after a bit of research on the net. :)

I'm sorry to learn you have been ill. I see you are like me: no matter how sick I am, if I can get to the kitchen and stand for 30 minutes, I somehow feel a surplus of energy to cook something good. I also prepare pesto with almonds (also because of the pine nuts price) and find it at least equally good (let's be frank: pine nuts are not dramatically different in taste...). Thank you for your kind wishes, I actually think the cough is a bit better today. :)

I was surprised at how similar in flavour the pesto made with almonds was to that made with pine nuts. I have a ton of sliced almonds in my freezer and it's very convenient just to throw in a 1/4 cup or so.
