I'm not planning on a whole Irish menu but I thought I would at least acknowledge St. Patrick's Day with a pot of cream of leek soup and some Irish soda bread to go with it

I have never had good luck making bread but this sounds like I might be able to make it without screwing it up. And thank you for the tip about halving eggs. When I would be making a recipe that required I halve an egg, I usually end up using a single small egg. But this would be much more precise.
It's pretty much a pour and stir proposition. Just a bit of kneading to get the dough into a round shape and then gingerly place it on the parchment paper, slash and bake.
If you want a sweet version, you add 1 cup of raisins and increase the sugar to 1/4 - 1/3 of a cup. The bread is also good toasted and drizzled with honey, or just drizzled with honey, if you want a sweet treat.
RE: The egg. It's handy to have that kind of info at hand in case you need it. :)
I love the way you have served the soup. So cute and old-fashioned... I have completely forgotten St Patrick's Day (on the other hand I have never really celebrated it). I have never baked my own bread and am really impressed by this one. It looks very good. Sissi (http://www.withaglass.com)
Thank you. I don't celebrate St. Patrick's day either but there are decorations for it in the stores so other than going and buying some Irish beer today or tomorrow, that will be it for me. :)
This 'quick bread' is very tasty for very little effort.
When I read your post for this leek soup the first thing I thought was why didn't I think of that? The ham stock flavour would be the perfect saltiness for the leeks. Really clever idea Maria. Coincidentally, I have a leek soup post coming up April 11th. Eva http://kitcheninspirations.wordpress.com
It's not being clever ... just frugal. :) I can't stand to throw away the flavoured liquid I get when I boil up that large picnic shoulder ham. I still have 2 more containers (4 cups each) in the freezer that I'll use in a bean or split pea soup.
I look forward to your leek soup. I know it will be amazing.
