Immersion Blender Mayonnaise

This is a technique post that I think everyone can make use of ...

... immersion blender (aka stick, hand or wand blender) mayonnaise.All you need is a blender with a narrow container or blending jar that is an inch or so wider in diameter than the base where the stainless steel blades are located. You can customize the basic recipe below ( Read more... )

WooHOO! Making homemade mayo is one of my culinary goals for this year, but I wasn't sure that my immersion blender would work for it - thanks so much for posting this!!!

It takes less than 2 minutes to make without whisking in the oil drop by drop as some recipes say. And if you make it in the same container that you are going to store it in, there's only the blender to wash up.

I may try this out this weekend - and add some herbs or roasted red pepper for flavour - seriously, thanks for the lesson in making homemade mayo! :-D

I am always scared to make homemade mayo because I have heard overmixing separates it :P
But yours looks too good to ignore :D

Two minutes was all it took, though it could have taken a bit less if I'd tilted the wand a bit and started moving it up slowly after the first minute. It gets really thick. :)

Home made mayo is such a wonderful indulgence, Maria and I'm always surprised how easy it is to make! Of course, that immersion blender is the one kitchen appliance I truly cannot live without. Evan my kitchenaid blender has been relegated to the basement pantry because of insufficient use, but not the immersion blender. I'll be darned if I don't pull it out at least once per day, but usually twice with the different fittings.

I can't remember where we got ours, or rather mine, as I'm the only one who used it even before my parents moved to the county. I'm guessing it was a present from my SIL and I don't use it enough. The plastic housing around the blades stain and, when it finally comes time to replace it, I'll get an all metal one. No attachments/fittings came with it but as I've only ever used it to puree soups, it hasn't been an issue.

What other things do you do with yours? I'd like to know. :)
