Chocolated Covered Caramels - Coarse Sea Salt and Plain Versions

The theme of today's post is "when life gives you lemons ... make lemonade."

The failed dulce de leche 'caramel' from my microwave experiment was sitting in the fridge and because I had no intention of eating it the way it was, I decided to turn the 1 cup of almost solid caramel into candy. Specifically, chocolate covered caramels.

I had a few failed batches of caramel this weekend...so finicky. The ones that turned out well turned out oh-so-well, but definitely had to throw out a few too.

Since I was trying to make dulce de leche and the result was caramels ... TECHNICALLY it was a fail and a success. :) My later attempt to make dulce de leche on the stove by boiling the sweetened condensed milk in the can WAS successful.

What a great way to use the caramel! I've only recently discovered salt and chocolate and even more recently found a dark chocolate with caramel and salt - tangy and sweet - but you went one better and made your own ! Delicious.

Thank you for your comment. I was in a hurry to get the caramels dipped in chocolate and into the fridge before my show started on tv. And the salt sprinkling was hit and miss in coverage. :)

What a great idea, but oh my, I would have a really difficult time resisting these, particularly the one's with the salt. Oh my.

Thank you. My intention was to make the caramels as attractive as possible so that I could get rid of them. If not, I can just throw them in the freezer.

Aren't you worried that the chocolate will turn white in the freezer?
That wouldn't stop me either, caramel doesn't freeze solid (don't ask how I know ;-)!) so every time I would go in the basement, one would inadvertently pop into my mouth. Go figure. Caramel is my weakness.

Not really. Though it hasn't gone in the freezer yet and, at the rate I'm eating them this way, they may not end up in the freezer after all. :)

Chocolate makes the caramel delivery system a lot easier and more palatable.

But of course, they're for you. But you have to get them quickly before they're all gone cause I keep going to the fridge to get another one ... or three.
