Me and My Turkey - Post #7 / Mexican Cooking Weekend 2

After I made this post, I realized that it was also part of my "Me and My Turkey" series so I've edited the post title to reflect that. It uses up the last of the turkey breast from my freezer.

It's a real Mexican feast! I must say I don't cook Mexican often and stopped going to Mexican restaurants because everything was swimming in fat, but I do love the few Mexican dishes I know how to prepare. Avocado is the love of my life. I once made savoury empanadas, but the lazy version using ready made pastry. I am sure your home-made dough is much much better. Sissi (http://www.withaglass.com)

I don't know how I missed replying to this but better late then never.

I try not to think about the fat used in cooking so many of those delicious dishes. I was pretty restrained with the refried beans and only used 1 tsp of bacon fat for the 3 cups I made. I love avocados as well. :)

The pastry was really easy to make. I'm planning on using it to make savoury empanadas eventually.

The more the merrier. You can even have your own bedroom though you'd have to share a bathroom. :)

I can see a few items crossed off your pantry list, well done!! I'm on a quest to clear out the cans of beans at the moment - slowly does it mind you as I don't want to eat beans every day!! Claire

I just found 3 cans of beans (all different styles) and 3 cans of mandarin oranges in one of the back cupboards a couple of days ago. :)

Hi Maria, your gorgeous Mexican dishes inspired me to buy into a group coupon deal to my favourite Mexican restaurant in Toronto, Milagro! For $45 we will get dinner for 2 including any 2 starters from the ceviches, ensaladas y sopas or botanas menu (up to $17.50 each), any 2 entrees (up to $21.95 each) and 2 (1oz) servings of tequila (up to $15.90 each). So cool! I am hoping to have lots of left overs since we usually only order one appetizer to share, and I order an appetizer as my main and JT orders a main course!

Sounds like a good deal. I'm sure you'll enjoy yourselves. :) There is another nearby Mexican restaurant that I want to visit soon as well.
