Don't worry my mother never made it from scratch either-I think she used Rogelio when I was a kid but also Dona maria depending on what was available. I've also seen her use Knorr. Nowadays she uses premade in a carton.

Us too, all you have to do is doctor it up with what ever flavor one would want MORE pronounced and the timing of when to add it.

It can be tricky, but nothing a little trial and error can fix.
