Menu bar is control option m. if you hit it twice, it'll take you to the status menu where you can see battery percentage, wireless networks, etc. To expand an item like the one you mentioned, it's control option vertical bar (the key right under the delete key). I can't remember how to delete an account in iChat, but I'll look it up and get back to you. If you need help, you can find me on various messengers or skype. Info's in the profile. :)

The control option m is a voiceover-specific command, it doesn't work unless you have voiceover turned on.
