If you have to use oil, try sweating the onion and jalepeno in Avocado oil, it has a higher smoke point the olive and the avacado flavor may add something to the mexican theme.
The best part of it is that the fats in Avocodo oil are even better for you then Olive Oil. All monounsaturated fats
interesting...i'm not sure my grocery store carries that, but i'll check. it seems like it might add the equivelant of cooking asian food in sesame or peanut oil. i didn't use any oil at all when i made this. i just used the juices of the meat to keep the onions and jalepenos from burning, but that requires some timing skills. clearly you are learning something in that cooking school of yours! when are you going to post something on geekcooks? miss you
