Ok, I was hungry as usual and couldn't make up my mind between pizza, spinach pie, and lasagna. So, I made all three in one:



Stuff:


-Puff pastry(Baby, don't fear the Filo) 17.3 oz(or close) package containing two sheets. I used Pepperidge Farms brand found in the freezer section of local grocer
-1 egg,
-Parm Reggiano-just for topping
-Mozzerella(Muutza-dell!) small fist size package
-Pepperoni thinnly sliced. Just enough to put on a pizza
-(optional)Sharp aged imported Provelone(optional because it is a VERY strong and salty cheese. Perhaps an aquired taste. I love it!
-Mushrooms thin sliced(I use pre-sliced from local grocer) again pizza topping amount. Important: Do NOT wash mushrooms! Wipe them if needed. Water will make them tough and yucky.
-Italian spices at least a Tablespoon(Oregano is just fine) Oregano means something like Big Mountains just in case you was a wondrin'
-Fresh cloves of Gaaarrlic smashed and diced. I used 3. Use more or less if you want
-Ricotta 15oz(POLLY O original is the best and the brand of my childhood. And BTW it's pronounced Ree-cgut-Ta by us Canarsie gals),
-Artichoke hearts if you feel so inclined to eat hearts. I repeat, pizza topping amount
-Pizza sauce whatever amount you'd put on a pizza( I was prepared to make my own, but found a great one-Pastorelli)
-Salt A pinch will do
-Pepper I like a good amount, a very liberal pinch
-Red wine for getting smashed while you cook.

First of all don't be afraid to cook. You can't screw this up. If you can put toppings on a pizza you can make this. You can also make variations. Use whatever pizza toppings you like. Leave out what you don't like.

1. Pour glass of wine
2. Put on Vince Guaraldi, ALice Coltrane, or Sun Ra's Out There A Minute or early Cramps and Misfits. Yanno, set the mood.
3. On floured suface let dough thaw for 40 minutes or so. This package had two layers.
-drink wine-
4. Preheat oven to 350 degrees F.
5. Grease any smallish baking pan(I used a 9x9(You may have to trim Filo to fit) with olive oil. Open package of dough. Divide the dough in half; press half(one sheet) of the dough into bottom of pan. You may have to trim dough to fit pan. If so, SAVE it! Wrap it in plastic wrap and toss in freezer use it for parmesan sticks some other time! Lightly brush with olive oil.
Set the remaining dough aside covered with plastic wrap.
6. Cover the layer of dough in the pan with foil and fill with dried beans or pasrty chains anything to keep it from getting too poofy while it bakes. Not popcorn!
Bake the dough for 20 minutes
7. Throw sliced mushrooms in a fry pan with olive oil and a pinch of salt and just lighty cook
8. After 20 mins remove pan from oven, remove the beans and foil. Put pan back into oven, continue baking the crust until golden brown, about 10 minutes more. Take out of oven and let the pan cool on a rack.
9. Meanwhile, make the Ricotta filling in a separate container:
-15 oz of ricotta
-one egg
-a good heaping of italian spices with a pinch more of Oregano, a pinch or more of salt, and a liberal dose of black pepper. MIX. Taste and get E Coli! Yum! Taste of my childhood.


10. Top baked bottom layer with Ricotta mix and stuff:


THINNLY sliced Pepperoni, most of the mushrooms, Mozzarella, very little Provelone(it's a very strong cheese), and crushed diced garlic.
11. Throw on second sheet of Filo for the top layer and bake until golden brown, about 35/40 minutes.

Ok. Your 35 minutes is up.
12. Remove from oven. Like a pizza top with sauce, cheeses, more pepperoni, remaining shrooms, and anything else that you like on a pizza. I LOVE Octopus in pizza. It's called Octo-pie. Get it? He he , har har. No, it's really good and it's really a NY thing! It's very HR Gigerish. Very Paul Komoda.
13. Bake another 5-8 minutes until cheeses melt all nice like

Take out of oven, let it settle for a few mins, and then EAT!

To reheat leftovers per slice:
350 degree oven for about 10 minutes or on the stovetop in frypan on low heat covered for about 7mins then uncover higher heat for about 3 mins to crisp it up. No microwave please. If you must, no more then 1 min per slice or you'll wind up with a mushy sloppy muck
