Super Tasty Stirfry

Apr 15, 2008 20:14

I made several mistakes in a row that resulted in an amazingly tasty stirfry! Mistake #1: went to grocery store without a list. Mistake #2: Started cooking before I realized exactely what I had (I was hungry - perhaps that was mistake #3?). The resulting stirfry is damn tasty!!! All ingredients purchased from Trader Joes.

1 bag sweet potato spears
1/2 bag baby courgettes, cut in 1/4's lengthwise
2 generous zoe sized hand fulls of sugar plum tomatoes*, cut in half
1 generous zoe sized hand full of fresh basil leaves, torn into smallish bits*
1 medium-large purple onion, sliced/chopped
2-3 cloves smooshed garlic (I use a garlic press)
Cumin
Oregano
2-3 tablespoons Chili powder - in this case I think it was casabel. Possibly more, to taste. (actual chilli powder isn't generally spicy)
Salt and pepper to taste (kosher and freshly ground is best)
2 strips thick cut Trader Joes Bacon, cut into little pieces
1.4 lbs ground turkey (one butchers shop package)
Olive oil

Saute onion, garlic and bacon in the olive oil. Add the sweet potato spears and cook till the onions soften. Add dried oregano and cumin. Cover and let steam for a bit to make sure the potato bits are really  cooked. Increase the heat and add ground turkey and most of the chili powder and cook, stirring often, until the turkey is mostly done. Add the courgettes and adjust seasoning to taste. Just before serving, add tomatoes and basil and stir in until warm through and the basil is wilted.  Serve on it's own or with a warm flour tortilla to wrap it up in. Nummy!

In other news, I've been informed that apparently my superiors have decided I am being quite uppity. I find this terribly amusing. I sent them a dispassionate letter detailed why I thought my review and resulting raise etc. weren't fair before I went on vacation - I even had external help to make sure I wasn't being emotional but grounded purely in fact. Since I've been back, I've been all about "please tell me how I can help you!" with no snarkiness whatsoever. No, really. Hmmm, I guess actually standing up for yourself has legs... that need to be managed.

I also had a phone screen today, for a position I am fairly certain is too Jr. for me. Ah well, I need the practice with interviewing anyway.. I actually hope I get the full interview so I can get some practice! Is that too mean of me?
