I know you were all biting your nails in suspense. Well Katherine is now the official correct spelling :)
I tend to prefer traditional spellings so was at first leaning towards Catherine but then Chris aptly pointed out that Catherine is of greek origin and there is no C in the greek alphabet.
One of the greek origins is:
Kappa Alpha Theta Alpha Rho Omicron Sigma spelled in english Katharos and supposedly translates to 'Pure'.
