Sugarfree Coconut Blondies
makes 8
85g sugarfree white chocolate
75g butter
1 t vanilla extract
1/4 cup powdered sweetener (or use 1/2 cup white sugar)
1/2-3/4 cup desiccated coconut
1/2 cup plain flour
1 large egg
Preheat oven to 180C/355F.
In a small pot with a little water, Place an appropriate bowl.
Melt the butter & chocolate in the bowl, over low heat.
When melted, Remove from the heat.
Stir in vanilla & sweetener (or sugar).
Allow to cool for 5 minutes.
Whisk the egg in a separate bowl.
Add the egg, Stir well.
Add the coconut & flour, Stir well.
Spoon mix into a prepared tin or cases.
Bake 15-20 mins.
