I bought a log of this Kolibrie Goat's Cheese (it's basically a brie made with goat's milk) and have been experimenting with it. The first thing I made was a savoury tart with caramelised red onions, dried basil, dried mint & a bit of olive oil in frozen puff pastry - it worked ok, nothing special. This is the second thing I've made, it was my lunch today - I felt like having warm, gooey cheese...
Warm Kolibrie Goat's Cheese Open-Faced Sandwich
Fresh tomato, sliced (I used small romas)
Fresh basil leaves
Kolibrie goat's cheese (or similar), sliced
Slices of landbrot bread (or similar)
Pepper (to taste)
Olive oil (to taste)
Pre-heat an oven to 200°C/390°F. On the slices of bread, Layer the tomato, a few of the basil leaves, the goat's cheese and then the remaining basil leaves. Season with some freshly ground black pepper and/or drizzle a little olive oil on top. Place your sandwich on a lined oven tray, and cook approx 5 minutes or until cheese has melted to your desired consistency.
