a different kind of makeover

so im sitting here eating another huuuuge plate of wheat free/gluten free pasta and its really good. kickass, even. its veggie spirals w/ a mix of diced tomatoes and fresh mozerella (basil, garlic and oregano flavored) topped with more mozerella/parmesean mix. you cant even tell the difference. for 3 dollars a bag i sure as hell hope not. i dont know if this is the answer, but its something im trying. if i didnt think it was worth it, or that i seriously have a gluten intolerance there is no way i would do this. it is a strict diet. it is taxing. it is confusing, trying to figure out where the wheat is hidden. but im learning, and reading alot so im hopeful. its a little more expensive to buy the substitutes, and my first trip to whole foods was rather overwhelming...but im getting the hang of it. and theres already so much regular stuff i can still eat. just no fast food, or anything prepackaged. therein lies my greatest challange. i think last week i had fast food at least 3 days. i guess that the more expensive foods are going to balance out then. the only thing i really need to replace is bread and pasta. bread is a little more tricky. i bought a loaf and it is pretty nasty. i havent tried it grilled yet, so i might not be giving it a fair shot. im a little afraid. it is some sketchy ass bread. and reallllly hard. i found arrowroot cookies i really like, so thats good. and even better dipped in nutella! yum. im going to go back to whole foods either today or tomorrow and try to find some edible bread, and maybe a box of pizza dough mix. this could be a total disaster, but im willing to bet thats part of the learning process. anyway. dont know if im making any progress yet since its only been 3 days, and it could be months before anything changes. but im ok so far without wheat. cheese, however is another story. if somehow i end up lactose intolerant, i really feel that might be the end of the world. it is probably my favorite food, ever. im also trying to cut back on caffine, especially at night. im falling asleep so much easier w./o it. but i think it gives me headaches to go without : ( cause of withdrawal. and i added a multivitamin to all this bc i found chewable ones, hooray for viactiv. i tried liquid ones for awhile but it always tasted kind gross and thick, and i cant swallow those huge pills so these are good, and taste like chocolate. so yay for me, and dont freak out when i say im on a special diet.
