Harvest time
Today we made our first harvest from our garden....two zucchini and two green peppers. We're going to add some mushrooms and make a stir-fry tonight.
The broccoli and peas have turned out to be a complete bust, the rabbits have eaten most of the lettuce, and its not really time yet for the beans and corn to be doing anything yet. But we're on the verge of an explosion of zucchini, yellow summer squash, cucumbers, peppers, and tomatoes.
Anyone have any good recipes to use up the zucchini and summer squash? All I can think of to do with them right now is roast, grill, or stir-fry them. Or make vegetable lasagna. And Brian wants to make zucchini bread, but that doesn't sound like anything I would eat. Is there such a thing as zucchini soup? I'm looking for things that will use up a lot at once, and can be stored for a while (don't have to be eaten immediately).
