Now I've always liked cucumbers, but it wasn't until I spent a semester in Israel that I fell in love with them.
On days we had field trips we would have a buffet of sorts to make our lunches. Pita bread, meats, cheeses, fruits, chips, sometimes a candy bar that we couldn't read because the label was in Arabic. It was all pretty standard lunch stuff. But most days there was this box of local produce- usually cucumbers and sometimes tomatoes. I don't know if one of our cooks brought it in or if it was from a local market. But I loved this box. I would throw a couple cucumbers and a tomato into my lunch bag and then later in the day when we were hungry, hot & tired we would pass around the couple of pocket knives that had been brought on the trip (this was back when you actually could travel with things like pocket knives quite easily) and slice up those veggies to add to our pitas. They made the rather boring, dry pita sandwiches taste like the best thing ever. I really do think it was the cucumbers. They were small & sweet, crisp & juicy.
Tonight I was trying to figure out what to eat as I had to run out the door. And I made myself a pita sandwich with what I had in the fridge- lunch meat, cheese, cucumbers and tomatoes. It brought a flood of happy memories back of some of the most amazing months of my life. And it reminded me just how much I love cucumbers.
