I had a nice time at my cooking class tonight... Fiesta Mexicana! We learned how to make (and sampled, whee!) margaritas, enchiladas verde, chicken flautas, chicken mole, shrimp & scallop ceviche, and carne asada tacos. For dessert, our chef bought a tres leches cake and we also had a slice of that. I have eaten a lot of enchiladas in my day, but I can honestly say these are the best I've ever had... it was almost a crime to only be allowed one! I am going to try to make the recipe sometime, and will try & post the recipe for all of you to enjoy too.
Other tidbits I learned:
- tomatillos are not from the tomato family -- they are from the gooseberry family!
- originally, margarita rims were salted to hide the taste of bad or cheap tequila.
- a lot of Mexican cheese are described as "smelling like feet."
- originally, carne asada meat was taken from the esophagus of the cow.
- here's a joke: what's the difference between skirt and flank steak? Skirt steak is what girl cows where on their nights out! (yeah, it was not that funny, but still...)
