Is THAT what we are doing when we knock on wood? I always wondered where that came from.

That's one of the versions. Supposedly, if you knock on wood when you make certain statements, it appeases the tree spirit and they don't attempt to change good fortune to bad.

Knocking wood is also one of those "don't tempt fate" things.

I knew it was meant as "don't tempt fate" but I wasn't sure of what it's origin was.
