I think this might be really thick, raw soup.
2 onions, diced
1/2 lb carrots, peeled and coined
4 stalks celery, sliced,
most of a rotisserie chicken, shredded or diced (I had four cups of frozen cooked chicken. I mostly defrosted it, and then ATTACKED WITH A KNIFE.)
can tomatoes (regular size, petite dice)
small can spicy v8
ricotta (opt., but recommended)
3 c cooked brown rice (or other grain)
Cook the onions until they're mostly carmelized and you're too tired to care.
Add the carrots and keep cooking until they look almost cooked (they will lie *deliciously*).
Add the celery, ditto.
Dump in the chicken, tomato, and V8. Heat through, turn off the heat, and forget while you wrestle with the goddamn sleeves of the shirt project (See previous post).
Cook and add the rice. Dish up for lunch.
Makes 5 (generous) lunch servings without the ricotta. With, I think it might have hit seven servings.
