Productive Day

It's not even noon yet, and already I have prepared and frozen enough food to last us for a month. I had a truckload of fresh fruits and veggies left over from the baby shower, so I spent the morning packing them up in handy portions for future use. I stewed 4 lbs. of grape tomatoes, cooked 5 lbs. of carrots, blanched 2 XL quarts worth of French green beans, roasted a heaping half-sheet pan of red peppers and produced 2 quarts of sauteed mushrooms. I also froze 2 lbs. each of fresh pineapple and mango. That leaves me with about 3 lbs. of strawberries, a flat of 30 fresh apricots and a giant bag of limes; I'll probably freeze the strawberries, then make some apricot preserves and lime sorbet. After we return from GeoWoodstock, that is.

Speaking of freezing, is there a way to freeze cheese? I'm skeptical. But I have a couple of lbs. of jarlsberg, muenster and provolone that I'd like to find something to do with. Maybe we'll wind up having some kind of fondue free-for-all.
