VERY red velvet.

I just made some red velvet cupcakes. They smell divine...there's only a tiny problem. In the recipe, it calls for a Tablespoon of red food coloring, an entire container of red food coloring has like half that. My delicious-smelling red velvet cupcakes are cartoon blood colored.
SWEET!
I'm wondering if you could do "blue velvet" in a similar manner...
