The genus Lactarius is a bit special: those mushrooms have latex hyphae in the flesh and the gills. Generally, the latex is white, but sometimes it can be strongly colored, by oxydation, or immediately. Lactarius, like Russula, have a fragile, chalk-like flesh, composed with round cells.
