I answered for SN only. I'm still involved but not as I used to be. And I'm still involved because of the Jus in Bello I think... Otherwise I'm not so sure I'd be still involved.
It's the strangest thing about Supernatural: Emi and I both love it, but we just haven't involved ourselves in fandom at all the way we have with Buffy and Who. I do have an idea to involve the brothers in a fanfic, but fanfic writing has been so sparse for me lately that I might never get to it.
I'm caught up! I think I've missed two or three over the years -- my daughter and I deliberately decided not to watch the "bug" episode from S1, although now we kind of regret that.
Personally, as a straight male, I can understand why people want to pair characters with Castiel!

As a straight female, I cannot see the point in pairing Castiel up with anyone until they give him a personality. I wish they would give him a beefier role, and use Misha's talents better

There are other pairings than wincest with Sam/Cean, Sam/John, Dean/John, or some combination of them. It even effects het with Sam/Mary, Dean/Mary.
Het Pairings
Sam/Jess, Sam/Sarah, Dean/Chole, Dean/Bella, Sam/Ruby, Sam/Bella, Dean/Ruby, Dean/Jo.
Other Slash Pairings
Dean/Castiel (a massive pairing), Sam/Gabriel With various pairings involving Castiel, Gabriel, Lucifer and Micheal.
Femslash
Ruby/Bela
I have assumed that you have seem all the episodes up to now and know who everyone is.

I like SPN but not enough to write fanfic. Same with TW, although I have dabbled with Jack.
