Coconut quinoa porridge with banana and palm sugar

Ingredients:

2 cups (500ml) coconut milk (I used 1 cup coconut milk, 1 cup normal milk)
1 cup (200g) quinoa
250g dark palm sugar/gula melaca OR 1.25 cups brown sugar
2 bananas sliced
1/2 cup shredded coconut, lightly toasted.

Method:

  1. Combine cocnut milk (or milk) with 1 cup water in a jug then set aside
  2. Combine the quinoa and a pinch of salt in a sauce pan. Add half the milk mixture and bring to boil, stirring over medium-low heat.
  3. Reduce heat to low and simmer, stirring occasionally for 20 - 25 minutes untilt he grains are tender and the mixture is a porridge consistency. Add milk mixture if required.
  4. Melt down palm sugar/brown sugar with 1 cup water over low heat. Stir to dissolve and simmer for 30 minutes until a thick syrup has formed, or mixture has reduced by half (note: I just used a few scoops of brown sugar and enough water to dissolve, I didn't want to make quite so much syrup).
  5. To serve, place 1 tablespoon of syrup into a glass, spoon over quinoa and add more syrup. Top with sliced banana and toasted coconut and serve warm.
  6. Note: Brown sugar syrup can keep for a week in the fridge

Can I just say how delicious this was? Quinoa (pronouned Keen-wah) is a super awesome South American grain which is high in calcium and protein and is gluten-free. Hit up your health food stores and get cooking - this is great to make a batch and then keep the left overs in the fridge. For breakfast the next day, just spoon into a cup, stir in condiments (syrup, fruit, milk) and microwave.

I just made a batch that just used water without the milk/coconut milk and it's just as good.

Also, it is recommended to rinse your quinoa. I've also seen that you should soak it overnight. This is because as per spookylolly stated that quinoa has a natural coating (saponin) which is better. I let my first lot soak for more than 8 hours and it was a disaster. I just rinsed mine properly, drained the water and it was perfect. Drain the quinoa from the saponin water using a fine sieve, swirl it around and away you go.
