semi theme: ricotta fritters with tomato salad

this is from jamie's italy. i changed a few things because im missing someingredients but it turned out fine. i saw the matinee show last week of jamie oliver live. it was absolute friggin' fantastic fun. im making sure im getting better seat next time! so so good.

all right on with the show... this is really good served as a starter. i had it for snack.



tomato salad
- 1 green tomato, chopped, seed discarded
- 1 ripe tomato, chopped, seed discarded
- 1 tsp fresh tarragon, chopped
- a swig of extra virgin olive oil
- a tiny swig of balsamic vinegar
- 1 tsp red chilli, seeded and chopped
- salt and cracked black pepper

combine everything together. you can use different types of other tomatoes. the idea is to get different colours and flavours in. jamies recipe used fresh basil but i have tarragon and thats actually really nice. different. but nice.



ricotta fritters

- 400g ricotta, crumbled
- 1 egg
- 1 tbsp flour
- 2 tbsp parmesan cheese, grated
- salt and cracked black pepper

1. mix everything together in a bowl.
2. take two spoons and shape the ricotta mixture. this will give you about 9-12.
3. in a non stick fring pan, heat a bit of olive oil and fry on all three sides until golden and crispy.
4. serve with tomato salad, sprinkle over a bit more grated parmesan.
