So thanks to
elspethsheir's inspiring post today, I made a sort of bacon and tomato hash (and I did add cremini mushrooms) to go with baguette (and it was really tasty), but that wasn't the highlight of dinner. Instead I made another composed salad:
Into a large wooden bowl, I tossed:
-1 can of baby corn, cut into one inch long pieces
-a couple handfuls of mixed pitted olives and marinated gigante beans from the olive bar at Whole Foods
-1 can of artichokes, drained well and each artichoke heart sliced into quarters
-a handful of bottled roasted red peppers, hacked into chunks
-one and a half pounds of trimmed asparagus, tossed with a little olive oil, coarse salt and freshly ground pepper, roasted in the oven in a single layer at 350 degrees farenheit and then cut into one inch chunks
-about one pound of fresh squid (bodies cut into thick rings, but I just pulled the tentacles apart a little), and sauteed in hot olive oil with some anchovy fillets until opaque. I broke the anchovies up as they cooked until they "melted" into the pan and lightly coated the squid.
-crumbled feta cheese
-drizzle of olive oil, coarse salt and pepper
N and I think that hot pepper flakes would go well with this, and so would oregano. I served it at room temperature, and it's' very hearty, and would travel well, so good for a picnic, but be careful about the squid (for food safety reasons). Obviously, anything can be substituted or omitted. These sorts of meals call for creativity! When I went to the store, all I knew I wanted to have was artichokes, and this salad grew out of that idea.
icajoleu popped by with a basket of Easter candy for me! *glee* We got him to stay for dinner, which was lovely! There was so much food and it was nice to have company....
Also, my mother sent me a gorgeous knitted scarf, a box of homemade cookies and Easter candy. I love my mom. :)
I'm still fighting this cold and hacking up a lung. Blech. But a lovely dinner, good company and Easter candy make all things better.
