Here I have a very yummy recipe for you:

Indian Spinach Soup

Ingredients:
  • 500 g fresh Spinach (also okay: deep frozen)
  • 1 onion
  • 2 Tablespoons Butter
  • half a litre vegetable broth
  • 4 Tablespoons Creme fraiche (also okay: yoghurt, buttermilk, etc...)
  • 4 Tablespoons Milk
  • 4 Tablespoons Lemon juice
  • 1 clove of garlic
  • 1 Teaspoon galgant powder (or ginger powder)
  • Salt & Pepper
Preparation for 4 persons:

  • blanch spinach in hot water
  • take it out the water and cut into small pieces
  • peel and dice onion
  • heat butter in a deep pot and steam onion in it
  • add vegetable broth and spinach
  • simmer 3 minutes
  • stir Creme fraiche, milk, lemon juice (soup may NOT cook anymore)
  • press clove of garlic into soup
  • add galgant powder and season to taste with salt & pepper
