You guys. Give me your favorite recipe that freezes well, and/or your favorite quick meal. If I am going to be on call for 30 hours followed by 12 off followed by 14 on, for a month, I'm not gonna want to cook

lasangne - takes a while to make, but freezes a treat. Pasta in various forms makes a nice quick meal - my record was four minutes from start to plate - fresh pasta (keep it in the fridge!) and simple tomato sauce (1 can chopped tomatos, 1/2 onion, quick fried, loads herbs, some garlic for tasty goodness). If you can pick up a stuffed pasta like tortellini (i favour the spinach and goats cheese ones) its very good - otherwise bulk out with any leftover veg (green beans are good, as are capsicum peppers)
Good old fashioned stew goes down a treat in colder weather - again, takes a few hours to make first time, but you can do a huuuuuuge panful, then pour into bowls, put cling film over them, and then put the bowls in the freezer - then microwave, and viola! Tasty hearty stew. I generally start with dried lentils, barley and split pea's (or soup mix if you can get it - its the dried packets of stuff) which you have to leave to soak overnight/for about 8 hours in plenty of water. Drain off the water and put in a big pan with loads of water (and some veggie stock cubes)- bring that to the boil. While its boiling chop carrots, potatoes, and any other veg you can get - literally, anything you like (those bags of frozen mixed veg work well too) and chuck em in. Simmer for about 3 hours, adding water whenever it gets low. season to taste. If you don't want it lumpy, blend it, or use a masher to remove the big lumps, which leaves it with a nice texture. it should be quite thick. This is basicly how to make almost any soup too. chuck ingredients plus water in a pan, and leave.
Chilli con (not)carne freezes well too. though you'll want to cook the rice fresh each time (never reheat rice).
and on that subject, rice! Cooks in about 10-15 mins, and if you fry up some nice veggies in that time (peppers and baby sweetcorn yummy) chuck the cooked rice in the frying pan with the cooked veg, and you have lovely fried rice - just add soy sauce!
if i've used any words or mentioned something you don't recognise, poke me - you must remember, i'm british! Just be glad I havent mentioned courgettes (zucchini to you)

Yeah, I think I'm gonna do rice etc--I'm a BIG soup/chili person but it is going to be HOT this month. I may make lasagna though.
Thanks for the input!
